The Complete book on cooking

All in all it's a solid book with everything you need to know about basic cooking with a emphasis on more complex versions of simple dishes. There's some great explanation of ingredients and how to handle them.
This book is not quite for the beginner because it's not basic enough, it doesn't explain enough about handling ingredients. At the same time it's not advanced enough for an advanced cook. I'd say it's for high beginners, who like a little a challenge.
